smoked duck/chicken soup

Ingredients:
- 1 black mushroom leaf (soaked in warm water)
- 5-6 perfumed mushrooms  (soaked in warm water)
- small onion (sliced thin)
- green onion stalks (cut green part of stalks into small slices)
- carrot (diced into small pieces)
- shallot (sliced thin)
- 4-6 dried shrimp
- Japanese fish pellets (if available)
- thickening cubes or powder (bột năng or bột sắn dây)
- smoked duck leg

(1)
- remove duck meat from bones and put aside
- make broth from duck bones, shallot cut into thin slices, dried shrimp, and fish pellets
- strain broth when done

(2)
- add meat and all other ingredients except green onion slices to the broth
- dissolve thickening cubes or powder in a glass of water and add to soup
- bring soup to a boil, add green onion slices and serve
