(1) smoked duck - skinned and sliced into thin strips
(2) mix following ingredients in a bowl and let sit
- cucumbers - seeded and sliced into thin, narrow, 2” strips
- carrot - sliced into thin, narrow, 1” strips
- small onion - sliced into thin 1” strips
- green onions - 3”strips
- crushed garlic
- ½-1 tsp sugar
- half as much salt
- twice as much vinegar
- thin strips of ‘Chinese coriander’ leaf [lá mùi tàu]
(3) lightly fry duck in a pan to reduce any fat and add to bowl
(4) add extra salt and vinegar to taste and let sit 5-10 minutes
